"What's a cockle?"
Common question for us. In very simple terms - small clams. However, they are distinctive, as true cockles are their own family. They have shells with ridges (unlike clams that are smooth) and live only in salt water, preferring sandy, sheltered areas - whereas clams pop up everywhere (if you've ever spent time in irrigation canals you know this).
Cockles are also more sweat and flavorful than clams. However, the problem with cockles is that they can make you very sick if they're not cooked well. We say this not to scare you, but to entice you. If you see cockles on a menu somewhere, you may want to think twice (we say this with love, from experience), but tinned cockles are *very* safe and are a great way to experience these delicious bivalves. They're also fun to eat as there are SO many of them in this tin. These cockles come from the cold waters of the Danish Limfjord.
