Escabeche/Vinegar/Pickle Sauce: we always need to warn people these are not like pickled herring or pickled, well, pickles. Escabeche is a traditional sauce from the region that relies on vinegar, paprika and oil - it's savory with a nice brightness from the vinegar (but not overwhelming). 

Donostia Foods is an importer based out of the Chicago area focusing on conservas. They work with producers there, package and import directly to the USA. We've found all their products of suburb quality and because there's fewer middle men their prices are amazing for the quality of product.
